Pat Yates's recipe:
Zucchini Bread
2 cups grated zucchini
2 eggs
1 cup salad oil (I used canola)
2 cups sugar
3 t vanilla
3 cups flour
1/2 t baking soda
1 t baking powder
1 t salt
1 T cinnamon
1/2 cup chopped nuts
Combine all the wet ingredients (including zucchini) in one bowl, and the dry in another. Slowly add dry mix to wet, then add nuts. Put in a buttered and floured loaf pan (2) and bake @ 375 for 60 minutes.
Makes 2 loaves
