Recipes for entertaining: Crab Mold with Crackers

Crab Mold and Crackers
1 can cream of Mushroom soup
2- 3 oz. packages block cream cheese
1 cup mayonnaise
1 cup finely chopped celery
1 small finely chopped red onion
1 envelope Knox gelatin
3 Tbsp water
1-6 oz can of white crab meat, drained
Heat together soup and cream cheese until cheese melts. Mix 1 envelope gelatin with 3 Tbsp cold water. Add to hot soup mixture.
Add 1 cup mayonnaise-mix well
Add 1 cup celery, mix
Add 1 finely chopped red onion
Drain and crumble crab meat. Add crab meat
Put mixture in a plastic mold sprayed lightly with pam. Set until firm. Turn mold onto serving plate and gently tug at sides with a rubber spatula to remove to retain it’s shape. Serve with crackers and garnish with parsley.
