Orange Glazed chicken with stelline pasta and lima beans

Recipe for Orange Glazed Chicken

1 tablespoon butter
6 skinless,  boneless, chicken breast halves about 1 1/2 lbs
2 tablespoons cornstarch
1 can vegetable or chicken broth
1/2 cup sweet orange marmalade
1 teaspoon lemon juice
6 cups hot cooked brown rice

On flat skillet, cook chicken breasts in melted butter until almost done.

In a bowl, stir together cornstarch, broth, marmalade, and lemon juice until smooth.  Put in a pot and cook until thick.  Pour  sauce over chicken while the chicken finishes cooking.

Serve over rice.

My kids would have liked it if I would have doubled the sauce mixture to have some additional sauce to serve on their plates.

We served with lima beans and stelline pasta (very tiny star shaped pasta)

It was my first time cooking the stelline pasta and I cooked in the water some garlic and then added butter on top when it was ready to serve and the kids loved it!
