Lion House Recipes Whole Wheat Bread

This comes from page 75 in the Lion House Recipes cookbook.

I love this bread recipe because it is easy and yummy.

1 package (1 tablespoon) dry yeast
3 cups lukewarm water
1 cup white flour
1 cup oatmeal
1/4 cup molasses
6 tablespoons non fat dry milk
6 tablespoons shortening, softened
6 1/2 cups whole wheat flour
1 1/2 tablespoons salt

If you are keeping your yeast in the freezer pull out several minutes before starting. (note from Stephanie)

Soften yeast in 3 cups lukewarm water in a large mixing bowl. Let sit for a few minutes.

Add remaining ingredients and beat with electric mixer until dough forms a ball and leaves sides of bowl (part of the flour may need to be mixed by hand). Remove beaters, cover bowl and let dough rise for 1 hour in warm area away from drafts. Mix down and mold into 2 loaves. Place in greased bread pans and let rise until about double in size. Bake at 400 degrees F. for 30 minutes or until desired doneness. Makes 2 loaves.

Note from Stephanie:
I sometimes put a piece of foil over the top when the top starts to look like it is almost done but the center needs a few more minutes. I do this maybe the last 7 or 8 minutes.
